Ingredients

  • a base (rice, mashed sweet potato, lentils.. just make it carby)

  • roasted or raw veggies - as many or as little as you want

  • protien of choice (we love felafel)

  • healthy handful of micro greens (we use pea tendrils often, they have a great crunch!)

  • dressing of choice

Preparation

We usually roast up a big batch of vegetables on Sunday for the upcoming week, and chop a few to have raw. We do a couple pans of carrots, parsnips, beets, asparagus, sweet potatos and broccoli. Roast on 400 for 30-40 minutes, turning half way through.


Assembling the bowl is easy, just pile it all on. BOOM! So nutritious and delicious.
